Sweet Potatoes

Ingredients



  • 4 large potatoes
  • 1 cup water



How to prepare


Peel the potatoes and wash with clean water
Put in the sauce pan and add water and put to cook for 20 minutes.


Serve with soup, or serve for breakfast with tea.

Katogo Cassava in Beans

Ingredients


1 Large cassava
1 cup beans
3 litres water
2 tomatoes
1 onion
1 tablespoon curry powder
4 tablespoon oil


How to prepare


Boil the beans in 21/2 water until tender
Peel Cassava and cut them into pieces
Wash in clean water
Put in the Saucepan and bring to boil for 10 minutes.
Fry the onions
Add tomatoes and let it cook for 2 minutes
Add one cup and let it boil for 10 minutes


Serve for breakfast or light lunch


Katogo Matoke and Groundnuts

Ingredients



  • I cluster matoke
  • 2 tomatoes
  • 1 onion
  • 100g powdered ground nuts
  • 1/2 spoon salt and 1 cup water



Procedure


Peel Matoke
Wash in clean water
Put in Sauce pan
Add water salt tomatoes and onions
Let it boil for 10 minutes
Mix the powdered  groundnuts in half cup cold water
Add into the boiling matoke


Serve as breakfast or little lunch



Smoked Fish

Ingredients



  • 1 Large Tilapia
  • 1/4 Table spoon magadi
  • 1/2 salt
  • 100g peanut butter
  • 2 tomatoes
  • 1 onion
  • 1 tea spoon curry powder
  • 2 cups water



How to prepare


Put two cup water into the sauce pan
Add 1/4  teaspoon magadi
Put to boil foe 3 minutes
Put the fish and let it simmer for 10 minutes
Add salt, tomatoes, onions and curry powder
Mix the peanut butter into a bowl until it's creamy
Pour into the fish and let it simmer for 5 minutes.


Serve hot with Brown bread or matoke.

Smoked Meat

Ingredients



  • 1 kg meat
  • 2 cups water
  • 1/2 teaspoon salt
  • 3 tomatoes
  • 1 onion
  • 1 green pepper
  • 2 cloves garlic



How to Prepare


Smoke the meat with charcoal on a charcoal stove until the juice drains and the meat turns brown.
Cut the meat into pieces
Wash in clean water
Add 2 cups of water and 1/2 teaspoon salt
Cover and let it boil for 5 minutes
Add tomatoes onions, green pepper and garlic
Let it boil for 1 hour.


Serve hot with matoke.

Malakwang

Malakwang is vegetables found in the northern part of Uganda
It tastes delicious and easy to cook.


Ingredients



  • 100g of malakwang
  • 1 litre water
  • 1 teaspoon salt
  • 200g peanut butter



Procedure


Put water in the pan
Add malakwang
And put to boil for 10 minutes
Put down and drain the water
Put the peanut butter  paste and stir until it's creamy.
Mix it with the malakwang.
Add salt to taste.
Serve it hot with sweet potatoes or Brown bread


Enjoy.

How to prepare matoke


This is matoke that is a traditional food prepared in Uganda. It is one of the staple foods of that country. It is very easy to prepare especially if it is for a few people.
        i.            1 cluster matoke
      ii.            1cup water
    iii.            2tablespoon cooking oil
    iv.            1/2 teaspoon salt
      v.            1onion
    vi.            2 tomatoes
  vii.            1spoon royco
Peel the matoke 2 wash in clean water put the cooking oil in a clean source pan add onions and cook for 2min put tomatoes and cook for 5min put matoke and add one cup of water cook for 20min.
It serves two, and can be served with beef stew, fish, chicken, or it can be eaten like that.

Welcome to East African Dishes

Welcome to the East African Dishes site where we will discuss everything related to the kinds of food that are found in East Africa. We will learn how to prepare foods from Kenya, Uganda and Tanzania.
